The ULTIMATE Chocolate Frosting

Holy cupcakes, Batman! It’s amazing. It’s whole food. It’s date-sweetened. It’s oil/butter-free. It’s SIMPLE.

It’s fluffy, creamy, decadent, spreadable, pipe-able … chocolate FROSTING!!!

I kid you not, THIS is the real deal. EVERYONE who tastes this loves it and can’t believe the simple and minimal plant-based ingredients. YES!

Ingredients

  • 1 cup raw cashews, soaked overnight, drained and rinsed.

  • 3/4 cup water (give or take a few tablespoons—see method)

  • 3/4 cup pitted medjool dates

  • 1/4 cup non-alkalized cocoa powder

  • 1 tsp vanilla

Method

  1. Add all ingredients to a high-powered blender. I can’t stress enough the importance of a good blender for this recipe. VITAMIX is simply the best and the one I recommend.

  2. Blend until smooth, starting with a little less than 3/4 cup of water, scraping down the sides as needed. Work up to 3/4 cup of water. Depending on your blender, you MAY need to add a little more water to get it to blend smoothly. IT’S THICK.

  3. Add love! 💗

  4. Refrigerate until cold (it must be as cold as possible to pipe).

  5. Spread, pipe, slather or, heck, just go hide somewhere and eat it with a spoon!

Makes enough for one standard-sized, double-layer cake. Enjoy!
