Easy Carrot Dogs

Woohoo! Now I’m sure you’ve seen or heard of carrot dogs. They made their debut around the plant-based recipe arena years ago. But I just love them and I love making them! They’re fun and the flavor profile is simply amazing and so similar to actual hot dogs.

These guys are pretty easy to make and they’re a perfect addition to any kind of summer picnic or barbecue menu. With the warmer weather approaching, I urge you to try your hand at making them. You’ll be surprised at how yummy they are!

Ingredients

  • 4 large carrots

~ for the marinade

  • 1/2 cup soy sauce (I used and prefer Nama Shoyu because it’s a fermented product and, as such, has beneficial probiotics)

  • 1/2 cup water

  • 1/4 cup pure maple syrup

  • 1 TBS vegan Worcestershire sauce

  • 2 tsp natural liquid smoke

  • 2 tsp onion granules (or powder)

  • 1 tsp garlic granules (or powder)

  • 1 tsp mustard powder (or plain yellow mustard)

Method

  1. Peel your carrots and cut the ends off so that they’re about the length of a hot dog. I like to use carrots that are kind of fat (about an inch in diameter) as opposed to thin ones.

  2. Mix together the marinade and add it to the carrots in a pot. Use a pot that accommodates all four carrots in one layer without much room to spare. You want the liquid to cover as much of the carrots as possible.

  3. Add love! 💗

  4. Simmer on the stovetop (COVERED) until the carrots are just fork tender. This takes about 45 minutes.

  5. Now you can either serve the carrots right away OR you can put them in the fridge overnight with the marinade and let them soak up more flavor. You can also grill them! YUM.

  6. Garnish with your favorite toppings. That’s it! Like I said, pretty easy.

Makes 4 carrot dogs. Enjoy!

Notes

I’ve seen recipes that use an Instant Pot for these. I’ve tried it and prefer the stovetop method. The Instant Pot cooks carrots SO quickly that sometimes they just get too soft. I’ve tried it a number of times using various time settings and I think it’s just easier to monitor the cooking time on the stove.
