Lemon Poppyseed Scones

Ingredients

~ dry

  • 2 cups blanched almond flour

  • 1 TBS tapioca flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 2 tsp poppy seeds

  • 1 tsp chia seeds

  • zest of one lemon

~ wet

  • 2 TBS maple syrup

  • 2 TBS lemon juice

  • 1 flax egg (1 TBS flax meal + 3 TBS water)

Method

  1. Preheat oven to 350° F.

  2. Combine wet ingredients and let sit for about 5 minutes.

  3. Line a baking sheet with parchment paper.

  4. Combine all dry ingredients in a mixing bowl.

  5. Add love! 💗

  6. Mix the wet ingredients into the dry and form the dough into a disc about 1″ high.

  7. Cut the disc in half, in half again and then into triangles.

  8. Separate the triangles, leaving about 1″ of room between each.

  9. Bake for 15-20 minutes, until the edges are golden brown.

  10. Let cool completely before serving.

Makes 8 yummy scones. Enjoy!
