Lemon Poppyseed Scones

Ingredients
~ dry
2 cups blanched almond flour
1 TBS tapioca flour
1 tsp baking powder
1 tsp baking soda
2 tsp poppy seeds
1 tsp chia seeds
zest of one lemon
~ wet
2 TBS maple syrup
2 TBS lemon juice
1 flax egg (1 TBS flax meal + 3 TBS water)
Method
Preheat oven to 350° F.
Combine wet ingredients and let sit for about 5 minutes.
Line a baking sheet with parchment paper.
Combine all dry ingredients in a mixing bowl.

Mix the wet ingredients into the dry and form the dough into a disc about 1″ high.
Cut the disc in half, in half again and then into triangles.
Separate the triangles, leaving about 1″ of room between each.
Bake for 15-20 minutes, until the edges are golden brown.
Let cool completely before serving.
Makes 8 yummy scones. Enjoy!
