Hearts of Palm Salad
This salad is a snap to put together and is so fresh and yummy that I almost always have some on hand. Hearts of palm? What are they? They are a vegetable harvested from the inner core and growing bud of certain palm trees. I was surprised to learn that these hearts are jam-packed with important nutrients and a long list of health benefits.
Hearts of palm are high in protein and, as such, make a great meat alternative. They also have a huge amount of manganese which is excellent for bone health! I came up with this salad when I was trying to add more iodine into my diet. So I include some nori in the ingredients, which is a super delish way to eat sea vegetables!
Ingredients
1 can or jar hearts of palm (I found a GREAT deal at Trader Joe’s. They can be upwards of $8 per jar, but T. Joe’s has them in cans for a fraction of the cost)
1 cup chopped or sliced cucumber (I like to use the small Persian cukes for this salad)
1/2 cup sliced grape tomatoes
1 small onion, chopped
1 TBS ume plum vinegar (see notes)
1 TBS prepared horseradish (optional but really adds a great flavor)
1 TBS nori flakes
2 tsp red wine vinegar
Method
Combine all ingredients together and mix well.

Stays fresh when refrigerated for about 3 days.
Serves 4-6. Enjoy!
Notes
Ume plum vinegar has become my salt alternative go-to. It’s super healthy BUT it does have a large amount of sodium so be aware of this and use sparingly and to taste.
