Simple Blended Salad

Blended Salad, where have you been all my life?! This “salad” is sooooo good and so easy to prepare. I will be making many more of these and changing them up, that’s for sure!

You can really use any veggies you like to make a blended salad. But a few of the ingredients that I feel should not be left out are lettuce (of course), avocado for creaminess, parsley and lemon for amazing freshness, and spinach for added fluffiness and a vibrant, green color. Otherwise, go ahead and experiment… try adding some radishes for a peppery taste, jicama for some sweetness and different herbs and spices that you enjoy. And most of all, have fun!

You will need a GOOD blender for this! I recommend Vitamix blenders because of their superior quality and extraordinary customer service.

Ingredients

  • 1 head fresh lettuce of your choice (I used a beautiful head of fluffy green leaf lettuce)

  • 1 red bell pepper

  • 2 celery ribs

  • 1 avocado

  • 2 spring onion stalks

  • 1 large cucumber

  • 2 large handfuls of baby spinach

  • 1 lemon, peeled and seeds removed

optional add-ins!

  • handful of nuts or seeds (hemp seeds would probably be wonderful in there!)

  • ginger for a spicy kick

  • sprouts and/or microgreens for another punch of nutrients

Method

  1. Roughly chop the veggies. If using a regular cucumber (as opposed to an English cucumber), I recommend peeling it as the skin can be quite bitter.

  2. Start by blending the highest water content veggies first—cucumber, pepper and celery. You won't need to add any water because these veggie are so high in natural water!

  3. Add the remaining veggies, a handful at a time, and blend until smooth.

  4. Add love 💗

  5. Drink right away. It doesn't keep well, as it will oxidize quickly.

Serves 2. Enjoy!
