Pumpkin Seed Milk

This is such an easy recipe and the seed milk is AMAZING! Seriously, I’ve been so frustrated over the years trying to find a tasty, plant-based milk that doesn’t have a lot of crap in it! I usually resort to Trader Joe’s brand of soy milk since it’s just 2 ingredients; soy beans and water. But it’s nice to change things up a little and this seed milk checks all the boxes for me… it’s creamy, delicious and easy to make. AND it won’t break the bank.

Pumpkin seeds are pretty outstanding as far as nutrients go. In Ayurvedic medicine, they are considered to be alkalizing and thought to nourish the blood and act as a natural diuretic. From stabilizing blood sugar to promoting sleep due to their high levels of magnesium and tryptophan, they are an excellent addition to any plant based menu. Pumpkin seeds are also high in zinc, which is known to support the immune system, enabling the body to make proteins and repair DNA, which contributes to wound healing, and plays a role in childhood growth and development. One other benefit that I just learned about is pumpkin seeds’ ability to rid the body of parasites!

I hope you will try this easy recipe! You will need a high powered blender, like a Vitamix and some nut milk strainer bags. I found these bags on Amazon and they’re simply the best. AND they’re very affordable at only $7.00 for 3 bags.

Ingredients

Method

  1. Soak the seeds for at least 6 hours or overnight.

  2. Drain and rinse the seeds and place them with the dates and one cup of the water into a high powered blender. Blend until smooth. Add the rest of the water and blend again.

  3. Pour the mixture through a nut milk bag and squeeze out the liquid. This can be a little bit of a tedious process. I happen to enjoy it! I use an 8 cup measuring cup for this which holds plenty and makes it easier to then pour into the storage jars.

  4. Add love! 💗

  5. Refrigerate. Stays fresh for 3-4 days.

Makes one quart. Enjoy!
