Pumpkin Seed Dressing

There’s nothing like a tasty, HEALTHY dressing to spruce up a salad. Contrary to popular opinion, you do NOT need oil to make salad dressing. Nuts, seeds and their butters are perfect for smooth, creamy salad dressings and offer tons more nutrients (where oil is virtually empty calories). Pumpkin seeds are rich in many phytonutrients. Even a small amount in your diet will provide a substantial quantity of healthy fats, magnesium, and zinc. Pumpkin seeds have a long history of nutritional use dating back to the Oaxaca Highlands of Mexico over 7,500 years ago! The health benefits of pumpkin seeds are now well known, even in the medical field.

This dressing is deliciously creamy and fresh, and simple to make. Do you have a high powered blender yet? If not, I highly recommend Vitamix. You’ll wonder how you ever lived without one!

Ingredients

  • ¼ cup raw pumpkin seed butter (or ½ cup raw shelled pumpkin seeds)

  • 1 cup unsweetened soy milk or any unsweetened non-dairy milk

  • 1 TBS white miso

  • juice of ½ lemon

  • 1 tsp Spike Salt-free Seasoning (my go-to all purpose seasoning but you can use whatever spices or seasonings you prefer)

  • 1 tsp onion powder or granules

  • 1 medjool date, pit removed

Method

  • Place all ingredients into a high powered blender, add love 💗 and blend until smooth.

Makes 1.5 cups. Enjoy!
