Basic Chia Pudding

Ch-ch-ch-CHIA! Let’s talk about these remarkable little seeds with a very big nutritional profile. If there was ever a true superfood, these fit the bill. They are real nutritional powerhouses. Notably, chia seeds have 8x more Omega-3 than salmon, 6x more calcium than milk, 30% more antioxidants than blueberries, 25% more fiber than flax seeds… and the list goes on.

Chia pudding is my favorite way to get a great dose of these magical seeds. This recipe is flavored with vanilla and is a good base for anything you want to create! Add some cocoa powder, nuts, fruits … anything your heart desires. It’s super simple to make too.

Ingredients

  • 2 cups unsweetened soy milk or other non-dairy milk

  • ½ cup white chia seeds (you can use black or white chia)

  • 3 TBS pure maple syrup

  • 1 tsp pure vanilla extract (or ½ tsp vanilla bean powder)

Instructions

  1. Combine all ingredients in a bowl. Stir well.

  2. Add love. 💗

  3. Stir every 10 minutes or so until the chia seeds start to gel up.

  4. When the chia seeds are floating around evenly, refrigerate for a few hours (overnight is best) in whatever serving vessels you will be using.

  5. Top with fresh fruit (optional)

  6. Done.

Makes 2 portions. Enjoy!
