Plant-based Egg Nog
This plant-based nog will knock your Christmas socks off! Seriously. It’s creamy and thick with those traditional ultra yummy holiday flavors of rum and nutmeg. Plant-based food festivity doesn’t get much better! You will need a high powered blender for this recipe. Vitamix is your friend! Also, a nut and seed grinder to grind your chia seeds, which is basically a coffee grinder. I have 2 grinders… one I use for coffee and the other for spices, nuts and seeds. The chia is what gives this beverage its thick consistency. So don’t leave it out, unless of course you prefer a thinner nog.
Ingredients
1 cup raw cashews
½ cup tightly-packed, pitted medjool dates OR ½ cup maple syrup (see notes)
3 cups water
1-2 TBS ground white chia seeds, depending on how thick you like it. It will also thicken more with refrigeration, so if you’re not going to use it all at the same time, I would use less.
2 tsp ground nutmeg + a little bit for garnish
1 tsp vanilla
1-2 tsp rum extract
1/4 tsp salt
1/8 tsp turmeric (for that distinctive pale yellow color)
Method
Blend the cashews with one cup water until smooth.
Add love. 💗
Add remaining ingredients and blend again until smooth.
Refrigerate and shake well before serving.
Top with a sprinkle of nutmeg.
Notes
I prefer to use dates in this recipe since they’re more of a whole food but maple syrup works just as well. Really, any sweetener that you like can be used here.
If you don’t have a high-powered blender, soak the cashews for about 4 hours prior. But I can’t guarantee that it would be just as smooth and creamy. I recommend Vitamix!
