Minted French Pea Soup

Ooo la la! This soup is so fresh and yummers! Yes, yummers IS a word. My dearest friend, Jeanne, who lived with us for a while coined it. And she used it A LOT when she ate my food. Haha. Anyway. This soup. It’s a knockoff of a recipe from Dr. Fuhrman. I changed it up a bit. I add spinach to the blended ingredients instead of leaving the leave whole. And sometimes I leave out the dates. But it’s really good with the dates. It rounds out the flavors really well.

Ingredients

  • 10 ounces frozen green peas

  • 1 small onion or medium-large sized shallot, chopped

  • 1 clove garlic, chopped

  • 3 TBS soup base seasoning (I used Vogue Seasoning Base)

  • 3 cups water (or you can use veggie stock instead of using the seasoning base)

  • 1 bunch fresh mint leaves (about 1/2 cup tightly-packed)

  • 3 dates, pitted

  • 1/2 cup raw cashews

  • 1/4 cup fresh lemon juice (about one large lemon)

  • 2 cups baby spinach

  • garnish of your choice (see notes)

Method

  1. Simmer peas, shallot and garlic in a little water for about 7 minutes.

  2. Pour pea mixture and all remaining ingredients (except the garnish) into a high powered blender. Blend until smooth and creamy (see notes).

  3. Add love! 💗

  4. Transfer to a pot to warm on the stove OR, if you have a Vitamix, just let it run for a few minutes to warm it,

  5. Pour into bowls and garnish.

Serves 4. Enjoy!

Notes

  • You really need a good blender for this (and SO MANY other recipes when you are plant-based)! Vitamix is the best and well worth the investment.

  • You can garnish this soup with chives, parsley, or for an extra special presentation, pea shoots!
