9 Plant-Based St. Patrick’s Day Recipes!

There’s no shortage of GREEN foods in the plant-based world! Here are nine of my favorite, classic St. Patty’s Day dishes, made plant-based. Enjoy!

IRISH COLCANNON

Traditionally made with potatoes, cabbage and leeks, I swapped the cabbage with kale. And of course, for this plant-based version, I used a rich cashew milk instead of heavy cream. Celebrate any day with this luscious, stick-to-your-ribs Irish comfort food. I assure you, there won’t be any leftovers. Blimey! 🍀

CAULIFLOWER-BROCCOLI “PEASTO”
WITH KELP NOODLES

The “peasto”—pesto sauce made with sweet peas—is deliciously creamy and delightfully sweet. The kelp noodles are fun and different. They look like glass noodles (the ones made from mung beans) but the texture is not at all similar. They are actually a little crunchy! They’re great in a salad, but I thought I’d try them warmed in this dish and they worked well. They don’t have much flavor on their own, so they go well in just about any dish, picking up the flavors of whatever ingredients you’re using! 🍀

This flavorful, bright green salad will wow even those who turn their noses up at kale! 🍀

MATCHA KIWI PARFAITS

Yum, yum, yum. You can never go wrong with chia pudding! It’s a breeze to put together and the kiwis add a presentation flare. I also added some matcha tea powder for another splash of complimentary color and an extra nutritional boost.🍀

DREAMY, CREAMY ASPARAGUS SOUP

The first time I had this soup I refused to believe it was dairy-free. I was at a friend’s house and she was introducing me to Dr. Fuhrman’s Eat to Live plan. The creamy texture and sweet, velvety notes in this dish are just perfect. AND it couldn’t be easier. 🍀

EMERALD KALE DETOX SOUP (RAW!)

If you’ve never had a raw soup before, you’re in for a treat. It’s so easy to make; just toss everything into the blender and you’re done.🍀

PISTACHIO MATCHA BLISS BALLS

For the relatively small amount of ingredients, the flavor profile of these little treats is very deep and rich. If you love pistachios, like we do, and are a fan of matcha tea, like we are… you will love these! They are also sweetened with dates only and they are DIVINE.🍀

PESARATTU DOSAS

Unlike some dosas, there is no fermentation required, just an overnight soak. These dosas, made with green mung beans, are soft and flavorful and you can modify the heat with the amount of green chillis you add. Not exactly traditional St. Patty’s Day food, but perfect Indian comfort food… and it’s green! 🍀
