Dreamy Creamy Asparagus Soup
The first time I had this soup I refused to believe it was dairy-free. I was at a friend’s house and she was introducing me to Dr. Fuhrman’s Eat to Live plan. The creamy texture and sweet, velvety notes in this dish are just perfect. AND it couldn’t be easier.
NOTE: You WILL need a good blender for this! I recommend Vitamix.
Big nod and thank you to Dr. Fuhrman!
Ingredients
1 pound fresh asparagus, chopped
2 TBS veggie broth powder (I like Vogue brand “chicken” base)
2 cups water
1 TBS tamari or other low sodium soy sauce
1 cup unsweetened plant milk (I used soy)
1/2 cup raw cashews
4 pitted dates
handful of chopped fresh parsley or chives, for garnish
Method
Simmer asparagus, veggie broth powder, water, and tamari in a soup pot until asparagus is tender.
Blend in a high-powered blender, with soy milk, cashews, and dates until smooth.
Add love! 💗
Garnish with parsley before serving (I used chives).
Serves 4. Enjoy!
