Mexican Bean Dip

This is such a simple recipe with a ton of flavor! You will need a food processor for this one. I really love bean dips. Whenever Mountain Man and I go out for Mexican food, we usually have to pass on the bean dip that they serve with the chips because it almost always contains dairy, not to mention insane amounts of salt. Ugh.

Next time you’re whipping up some Mexican goodies, go ahead and try this one. Try to find a salsa that is low in salt. My grocery store now carries a really great organic one, that’s FRESH and has very low sodium. Check in your store’s produce section for the fresh ones.

Ingredients

  • 2 cups cooked pinto beans (if using canned, try Eden brand which has no added salt)

  • 1/2 cup of your favorite salsa, divided

  • 1/4 cup water or vegetable broth

  • 2 TBS nutritional yeast

  • 1 tsp onion powder or flakes

  • 1 tsp smoked paprika

  • 1/2 tsp garlic powder

  • hot sauce to taste

Method

  1. Place all ingredients into a food processor except half of the salsa and process until smooth.

  2. Add the remaining salsa and just stir in or pulse a few times.

  3. Add love! 💗

  4. That's it!

Serves 4. Enjoy!
