Kiwi Chia Parfait

Want to make a statement with a dessert? This one fits the bill! It’s relatively easy to make, with minimal ingredients. PLUS, oodles of nutrients from those wondrous little chia seeds. Yum! I also added some matcha tea powder for another splash of complimentary color and an extra nutritional boost.

I must say something about kiwis here… they are often overlooked for the nutritional powerhouses that they are and the natural remedies they offer. Sweet and tangy, these fruits offer lots of antioxidants and Vitamin C. They also contain zeaxanthin and lutein, essential nutrients for the eyes and vision. Like pineapple, kiwis also contain the enzyme bromelain, which can break down proteins, aid in digestion and heal inflammation.

Ingredients

  • 2 cups unsweetened plant milk (I used a combination of soy and coconut)

  • 1/2 cup chia seeds

  • 3 TBS maple syrup

  • 1 tsp matcha tea

  • 1/2 tsp vanilla extract

  • 4 kiwis

Method

  1. Combine the chia seeds with the plant milk, vanilla and maple syrup. Stir and let sit for at least 20 minutes so that the pudding thickens up.

  2. Once thick, separate the mixture into two vessels and add the matcha powder to one of them. Stir well.

  3. Peel and slice the kiwis. Cut each slice in half.

  4. Arrange your parfait cups however you like, alternating the white and matcha puddings and slices of kiwi.

  5. Add love. 💚

Serves 2-4. Enjoy!

Notes
This recipe makes two rather large servings, but you could always divide it up into four smaller glasses.
