Oil-free French Dressing

french-dressing-1.jpg

Always one of my favorites, store-bought French Dressing is usually loaded with oil and salt. So making your own is worth it! This dressing is tangy and sweet and reminiscent of the old classic that I grew up with by Wish Bone. But this one’s better, if I do say so myself!

Ingredients

  • 1 cup chopped, cooked carrots

  • ¼ cup ketchup (see notes)

  • 2 TBS almond butter

  • 2 pitted medjool dates

  • 1 tsp Worcestershire sauce (I found a good, organic brand called "The Wizard's")

  • 2 TBS red wine vinegar

  • 1 tsp onion powder

  • 1/2 tsp garlic powder

  • 1 tsp ume plum vinegar, or sub with miso paste

  • about 3/4 cup water (use as much as you like for the consistency you prefer)

Method

Makes about 2 cups. Enjoy!

Notes

You can certainly use tomato paste instead of ketchup for this recipe. I prefer the ketchup as it offers more flavor and acidity to round out the flavor. If you decide on tomato paste, just add a little more onion and garlic powders.
