Cranberry Orange Oatmeal Cookies

Can we say HOLIDAY COOKIES? Holiday baking doesn’t get much simpler than these yummy cookies! Oats make a great cookie base for a gluten-free goodie. These are super festive with a little tang from the dried cranberries, a freshness from the orange and rich sweetness from maple syrup. Perfect for a cold, December day by the fire.

Ingredients

~ dry

  • 3/4 cup oat flour

  • 1/4 cup rolled oats

  • 1 tablespoon ground flax seeds

  • 1 teaspoon corn starch

  • 1/4 cup dried cranberries

  • 1/4 cup chopped pecans

  • 1/2 teaspoon cinnamon

  • 1/4 pinch salt

  • 1/4 teaspoon baking powder

~ wet

  • 1/4 cup pure maple syrup

  • 1/2 teaspoon orange extract OR zest of one organic orange

  • 1/4 cup raw cashew butter (or sub with almond butter)

Method

  1. Preheat oven to 350°F.

  2. Line a cookie sheet with parchment paper.

  3. Mix all dry ingredients together.

  4. Mix the wet ingredients together and add to the dry.

  5. Mix well to incorporate all.

  6. Add love. 💗

  7. Form into balls about 1 1/2 inches in diameter. Roll the balls in your hands and place on the cookie sheet, then press down lightly and shape into discs.

  8. Bake for about 15 minutes until just barely golden.

  9. Cool and serve!

Makes one dozen festive cookies. Enjoy!
