Cornmeal Waffles with Blackberry Chia Jam
There’s just something about corn muffins with blackberry jam that made me want to create this breakfast dish… I love the flavor combination! The waffles are OH-SO-DELICIOUS. Add to them this 2-ingredient blackberry-chia jam and this breakfast is knocked out of the park!
I’ve made other chia jams before. Like this yummy strawberry jam. It’s SUPER easy. It’s just fruit and chia seeds! It thickens up in the fridge. Of course, you’ll need to find the sweetest fruits for it. And these blackberries really deliver. I found them on sale at my market. Organic no less! They were so good I had to go back and buy more. I think I bought out the store. 😆
I made the waffles on this adorable little waffle iron that my neighbor, Jinny, bought for me. Thanks, Jinny! It’s a great little machine.
So these waffles taste a lot like a corn toaster thingy that I ate when I was a kid! I used to love them Amazingly, they still make them (I’m old—haha)… I don’t know if the ingredients have changed since then but WOW! What a bunch of crapola!
Ingredients
~ for the waffles
1 cup cornmeal (I used Bob’s Red Mill corn grits)
1 cup flour (I used Bob’s 1:1 Gluten-Free)
2 TBS coconut sugar (or sweetener of your choice)
2 tsp baking powder
pinch of sea salt (optional)
1½ cups unsweetened plant milk (I used soy)
~ for the jam
12 oz fresh, sweet blackberries
3 TBS chia seeds (I used white chia seeds which look nicer than black—they’re also great for baking when using ground chia seeds as an egg replacement)
Method
~ for the jam
Place the berries and the chia seeds into a food processor and process until combined.

Refrigerate for at least 6 hours before serving.
~ for the waffles
Mix all the dry waffle ingredients together. Then add the milk and stir well to combine.

Drop by ¼ cupful onto a mini waffle maker or ½ cupful on a regular sized waffle iron.
Cook WELL. The texture is key here. If you undercook them they will be soggy and chewy. You want a good golden-brown color on them so that they stay crispy on the outside. If you make a bunch at a time, you can also just pop them into the toaster for a short time to crisp them up.
Makes 10 mini-waffles or 5 full sized. Enjoy!
