Breakfast Sausage Patties

I don’t know about you, but I was raised on the Standard American Diet (SAD), laden with cholesterol-rich animal products. It’s been TEN years since I began my plant-based journey, so at my age (ha!) that’s many years of eating SAD food! And, yes, I admit that sometimes I miss the flavor and texture of those old favorites. So I enjoy recreating them using healthy ingredients. Like this one. Ta-da!

I made these for my dear friends who are part of our vegan supper club… for brunch. They were a big hit and now I happily share the recipe with you. Yay! This yields 24 patties! yes for a crowd. Feel free to cut it in half. These patties would make a perfect addition to any vegan brunch table, holiday or not. Don’t let the long list of ingredients scare you. It’s mostly spices. Yeah, it’s all about the spices.

You will need a food processor for this recipe. I recommend this Cuisinart model. It’s a real workhorse and I’ve been using mine for years.

Makes 24 patties. Enjoy!

Ingredients

  • 8 oz. Butler Soy Curls (1 bag)

  • one 15 oz. can adzuki beans, or any small red beans--1½ cups (I used Eden brand)

  • 1 cup raw walnuts

  • ½ cup raw pine nuts

  • ¼ cup ground flax seeds + 6 TBS water

  • ¼ cup + 2 TBS tapioca flour

  • 2 TBS tamari or other lower sodium soy sauce

  • 2 TBS pure maple syrup

  • 2 tsp dried thyme

  • 2 tsp ground fennel seeds

  • 2 tsp smoked paprika

  • 2 tsp natural maple flavoring

  • 2 tsp Spike salt-free seasoning

  • 1 tsp onion powder

  • ½ tsp chili flakes (or to taste)

  • ½ tsp ground black pepper

  • ½ tsp salt (optional and to taste)

Method

  • Combine the flax meal with the water and set aside.

  • Soak the soy curls in warm water for about 15 minutes until soft. Then squeeze out as much water as you can and set aside.

  • Preheat oven to 350° F. (see notes)

  • Line a baking sheet with parchment paper or a silicone sheet.

  • Pulse the soy curls in a food processor until they are broken up into small pieces.

  • Add the walnuts and pine nuts and pulse again until the nuts are pretty finely broken but not mushy.

  • Add all remaining ingredients, including the flax mixture, and pulse until well combined, scraping down the sides as needed. Add a bit of water if needed until the mixture holds together well. You may need to do this in batches, depending on the size of your food processor.

  • Shape into patties about 3" wide and ½" high. Each will be ¼ cup in volume. (I used an ice cream scooper to ensure they were all the same size.)

  • Bake for 30 minutes, flipping at 15 minutes. 

Notes

You can cook these on a stovetop skillet if you prefer rather than baking. I like to bake them because then I can omit any oil, even though it would be minimal if you used a good spray cooking oil. It’s your choice.
